How many degrees of separation will the court issue? Is this like the
Kevin Bacon thing? :)

There is a middle ground between staying together and divorce. That middle
ground is called "legal separation". The Court will issue a degree of legal
separation in the appropriate circumstances.

What is this? How formal is a formal separation agreement?
I know sadly too little about family law -- is there something that
couples file with the court?
My client is probably going to be separated again from his wife (long
story -- aren't they all!!) and in order to count just his assets and
income prior to the divorce, he needs a formal separation agreement.
Thanks in advance!!

"formal" separation agreement

A "marital settlement agreement" is a contractual agreement between the parties that is usually prepared in conjunction with a legal separation or divorce proceeding. Then, the agreement is filed with the court and incorporated into the divorce judgment.
If it is going to take a while for a divorce proceeding to commence, you could prepare a "transmutation agreement" or post nup agreement. This agreement would not be filed with the court, as there is no underlying court proceeding. However, if there is any real property involved, it could be filed with the county recorder.
